Jodi Dennis will be conducting a class on the basics of canning on Wednesday, August 24.
If you’ve never canned before, or if it’s been awhile and you just need a brush-up, this class is for you.
Did you know that it was Napoleon who was responsible for the process of canning foods as we know it today?
An article by Jerry James Stone explains:
“It was Napoleon and the French government that really changed everything in food preservation.
Hoping to find a more effective way to feed his troops, a prize of 12,000 francs was offered to anyone who could devise such a means.
A Parisian confectioner and chef, Nicolas Appert, began experimenting and discovered that it was heat that kept pesky spoilage (caused by microbes, although he didn’t know this) at bay.
This was even though the official scientific discovery of those microbes in relation to food spoilage wouldn’t come until some 50 years later.”
